Wash and pat chicken dry thoroughly.
In a large bowl, combine Swiss Mambo Sauce, green seasoning, jerk seasoning, paprika, garlic powder, black pepper, oil, salt, and honey or brown sugar if using.
Add chicken pieces and coat evenly in the marinade.
Cover and marinate for at least 30 minutes or overnight for deeper flavour.
Preheat oven or grill to 375°F.
Arrange chicken pieces on a greased baking tray or grill rack.
Bake or grill for 35–40 minutes, turning halfway through cooking.
Baste chicken occasionally with remaining marinade for extra flavour and colour.
Cook until chicken is fully done and lightly caramelised on the outside.
Garnish with fresh chive or parsley if desired.
Serve hot with fries, rice, salad, or grilled vegetables.
