Mambo Jerk-Style Chicken

Spicy, seasoned chicken pieces baked or grilled to a beautifully caramelized finish.

Ingredients  

Instructions 

  • Wash and pat chicken dry thoroughly.
  • In a large bowl, combine Swiss Mambo Sauce, green seasoning, jerk seasoning, paprika, garlic powder, black pepper, oil, salt, and honey or brown sugar if using.
  • Add chicken pieces and coat evenly in the marinade.
  • Cover and marinate for at least 30 minutes or overnight for deeper flavour.
  • Preheat oven or grill to 375°F.
  • Arrange chicken pieces on a greased baking tray or grill rack.
  • Bake or grill for 35–40 minutes, turning halfway through cooking.
  • Baste chicken occasionally with remaining marinade for extra flavour and colour.
  • Cook until chicken is fully done and lightly caramelised on the outside.
  • Garnish with fresh chive or parsley if desired.
  • Serve hot with fries, rice, salad, or grilled vegetables.
